Ingredients:

  • ½ cup whole wheat pastry flour
  • ½ rolled oats (not instant)
  • ¼ teaspoon non-aluminum baking powder
  • ¼ teaspoon cinnamon
  • ¼ cup molasses, sorghum or maple syrup
  • 2 Tablespoons corn oil
  • 1 Tablespoon water
  • ¾ teaspoon vanilla
  • ¼ cup walnuts, coarsely chopped
  • ¼ cup raisins

Preparation:

  1. Preheat oven to 350°F.
  2. Place flour, oats, baking powder, cinnamon and salt in a small mixing bowl. Stir together and set aside.
  3. In a small bowl or measuring cup, mix syrup, oil, water and vanilla. Mix well.
  4. Pour the liquid mixture into the dry ingredients along with walnuts and raisins. Mix thoroughly.
  5. Drop the dough in rounded spoonfuls onto a baking sheet. Flatten each cookie with the back of the spoon.
  6. Bake for 12-14 minutes or until lightly browned.
  7. Let cookies cool on a rack before serving.
