Ingredients:

  • 1/2 cup cooked quinoa
  • 4 pears
  • 3 lemon juice
  • pinch fine salt
  • pinch cinnamon
  • 3 tablespoons melted coconut oil
  • 1/4 cup chopped nuts
  • 1 tablespoon maple syrup or honey
  • 1/4 cup dried fruit
  • 1/4 cup unsweetened coconut flakes

DIRECTIONS:

  1. Preheat oven to 350° rack in middle.
  2. Cut pears in half and flatten bottoms so they lay flat.
  3. Scoop out seeds and core.
  4. Rub with lemon juice to preserve color.
  5. Spray baking dish
  6. Combine quinoa, 1 tablespoon of coconut oil and remaining ingredients.
  7. Stuff pears with mixture.
  8. Drizzle remaining coconut oil over top.
  9. Bake 15-20 minutes until pears are soft.
  10. OPTIONAL: Top with healthy whipped topping.
