Ingredients:
- 1/2 cup cooked quinoa
- 4 pears
- 3 lemon juice
- pinch fine salt
- pinch cinnamon
- 3 tablespoons melted coconut oil
- 1/4 cup chopped nuts
- 1 tablespoon maple syrup or honey
- 1/4 cup dried fruit
- 1/4 cup unsweetened coconut flakes
DIRECTIONS:
- Preheat oven to 350° rack in middle.
- Cut pears in half and flatten bottoms so they lay flat.
- Scoop out seeds and core.
- Rub with lemon juice to preserve color.
- Spray baking dish
- Combine quinoa, 1 tablespoon of coconut oil and remaining ingredients.
- Stuff pears with mixture.
- Drizzle remaining coconut oil over top.
- Bake 15-20 minutes until pears are soft.
- OPTIONAL: Top with healthy whipped topping.
