Makes 12 servings.


  • 4 cucumbers, peeled, quartered lengthwise and sliced
  • 1 cup cashews
  • water
  • 4 Tbsp. lemon juice
  • 1 Tbsp. herbamare seasoning


  1. Blend cashews with just enough water to make a smooth thick cream. 
  2. Add lemon juice and herbamare and blend until mixed.
  3. Prepare cucumbers and add a small amount of salt to make them weep and let stand for an hour or so then drain off liquid.
  4. Add cashew cream to cucumbers.
  5. Chill and serve.
